Recipe: Cozy Pumpkin Apple Oats

I love waking up with something cozy and warm, especially as we move into the winter months. Enter: my Cozy Pumpkin Apple Oats!
This oatmeal is thick, creamy, warm and full of all my favorite fall flavors. I topped mine with some maple-spieced walnuts, apple butter, and chopped apple, but you can use whatever toppings you wish! Nut butter or chocolate chips would also be delicious.
I whip up this single-serving bowl of oatmeal on weekdays as part of my daily routine. But double or even quadruple it, and it would also be a lovely breakfast to make for guests or lazy weekend mornings.
To go for a straight-up pumpkin version of these oats, you can substitute the apple cider for water or more milk of your choice. Enjoy!
Cozy Pumpkin Apple Oats

INGREDIENTS
FOR THE OATMEAL- 1/2 cup Old Fashioned Rolled oats
- 1/3 cup unsweetened almond milk (or milk of choice)
- 1/3 cup apple cider
- 1/4 cup pumpkin puree
- 1 tablespoon brown sugar
- 1 tablespoon maple syrup
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/4 c chopped walnuts
- 1 teaspoon maple syrup
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/2 one apple, diced
- Apple butter or maple syrup
- Warm almond milk or other milk, if desired
INSTRUCTIONS
Maple-Spiced Walnuts (optional)- Preheat the oven to 350 degrees Fahrenheit.
- Place walnuts on a small baking sheet, toast for 4-7 minutes until golden brown.
- Toss nuts in maple, salt and cinnamon to coat.
- In a small saucepan, toast the cinnamon and nutmeg on medium low heat for 30 seconds.
- Add oats, milk, cider, pumpkin, brown sugar, maple syrup, and salt. Stir to combine.
- Cook for about 7-10 minutes until the oats are softened and cooked to desired consistency.
- Remove from heat and top with walnuts, apple butter or maple syrup, and diced apples.
- Combine all oatmeal ingredients a microwave safe bowl. Microwave for about 2 minutes or until oats are cooked through.
